Chewy Chocolate Chip Recipes
4 1/4 cups/1060 mL all-purpose flour
1 tsp/5 mL Baking Powder
1 tsp/5 mL baking soda
1 1/2 cups/375 mL butter, softened
1 1/4 cups/310 mL sugar
1 1/4 cups/310 mL firmly packed brown sugar
2 eggs
1 tbsp/15 mL Watkins Original Double Strength Vanilla Extract
12 oz chopped chocolate
Watkins Sea Salt (optional)
Heat oven to 375 F/190 C. Combine flour, baking powder and baking soda in medium bowl; set aside. Combine butter, sugar and brown sugar in a large bowl. Beat at medium speed, scraping bowl often, until creamy. Add eggs and vanilla. Continue beating, scraping bowl often, until well mixed. Reduce speed to low. Gradually beat, adding flour mixture, until well mixed. Stir in chocolate chunks. Drop dough by rounded tablespoonfuls, 2 inches/5 cm apart, onto ungreased cookie sheet. Bake for 12 to 15 minutes or until golden brown. Sprinkle with sea salt while still warm.

No Brown sugar? For every 1 cup of white sugar add 1 Tbsp molasses (for light) and 2 Tbsps molasses for (dark brown sugar).

Apple Cider Quick Bread
1/2 cup whole wheat flour
1/2 cup packed brown sugar
3 T. tasted wheat germ
2 tsp. Baking Powder
1 tsp. Watkins Ground Cinnamon
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp Watkins Ground Nutmeg
2 eggs, slightly beaten
1 egg white
1/2 cup apple cider or unsweetened apple juice
1/4 cup plain yogurt
1/4 cup Grapeseed Oil
1 tsp. Watkins Original Double-Strength Vanilla
1 cup shredded peeled tart apple
1/3 cup golden raisins
1 tsp. Orange Peel
In a large bowl, combine the first nine ingredients. In a small bowl, combine the eggs, egg white, cider, yogurt, oil and vanilla. Stir into dry ingredients just until moistened. Fold in the apple, raisins and orange peel. Transfer to a greased 9 x 5 x 3 inch loaf pan. Bake at 350ºF for 50 to 55 minutes or until a toothpick inserted near the center comes out clean. 1 cup/250 mL butter, softened
1/2 cup/125 mL powdered sugar
1 tsp/5 mL Watkins Pure Vanilla Extract
1 tsp/5 mL Watkins Imitation Rum
2 cups/500 mL sifted all-purpose flour
1 cup/250 mL finely-chopped walnuts, almonds or pecans
2 tbsp/30 mL half-and-half
Additional powdered sugar
Watkins Pure Ground Cinnamon
Beat butter, sugar and vanilla until light and fluffy. Stir in flour, walnuts and half-and-half; beat until smooth. Shape into 1-inch/25-mm balls and place on ungreased baking sheet. Bake at 400°F/200°C for 12 minutes or until set but not brown. Cool slightly, roll in powdered sugar and set on wire rack to cool. Mix additional powdered sugar, and cinnamon to taste; roll balls again in cinnamon/sugar mixture. Store in well-sealed containers.

These cookies will literally melt in your mouth
Maple Shortbread
2 cups butter, softened
1 cup maple sugar
1 tsp Watkins Maple Extract. (If you cannot find maple sugar you can use extra Maple Extract)
1/2 cup cornstarch
3 cups flour
Preheat your oven to 350 degrees. Lightly grease your cookie sheets or use Watkins cooking spray.
Using an hand held electric mixer, cream the butter, sugar and maple extract until very creamy. Gradually beat in the flour and cornstarch. Beat the batter until it looks like slightly over beaten whipped cream. About 10 minutes. Drop the batter by heaping a generous tablespoon on to the prepared cookie sheets. It the batter sticks to the spoon slightly grease it and dust it with cornstarch. Add a walnut piece into the middle of each cookie. Bake the cookies for approximately 15 minutes. Remove the cookies when they start to brown on the bottom. While the cookies are still hot from the oven sprinkle a little of the maple sugar on top of each cookie. Let the cookies cool for at least 10 minutes before transferring them on to a plate.

1/3 cup/80 mL vegetable shortening
1/2 cup/125 mL sugar
2 eggs
1 tsp/5 mL Watkins Original Gourmet Baking Vanilla™
3/4 tsp/4 mL Watkins Banana Extract
1-3/4 cups/440 mL all-purpose flour
1 tsp/5 mL baking powder
1-1/2 tsp/7.5 mL Watkins Pure Ground Cinnamon
1/2 tsp/2.5 mL baking soda
1/2 tsp/2.5 mL Watkins Coarse Sea Salt
1/4 tsp/1.2 nutmeg
1 cup/250 mL mashed ripe banana
1/2 cup/125 mL chopped walnuts
Grease bottom only of a 9 × 5-inch/23 × 13-cm loaf pan; set aside. In large bowl, cream together the shortening and sugar until light and fluffy. Mix in the eggs and vanilla and banana extracts until well combined. In another bowl combine flour, baking powder, cinnamon, baking soda, salt, and nutmeg. Add alternately with bananas to sugar mixture; mix well. Stir in nuts. Pour into prepared pan. Bake at 350°F/180ºC for 45 to 50 minutes or until bread tests done. Cool in pan on rack 5 minutes. Turn out of pan and cool completely on rack. To store, wrap tightly and refrigerate.
Makes 1 loaf, 12 servings.

TIP: No Baking powder in your cupboard? For each cup of flour you recipe calls for, substitute 2 tsp cream of tartar, 1 tsp baking soda, and 1/2 tsp salt for the baking powder you don't have.

1/2 cup shortening or margarine
1 cup white sugar
2 eggs, beaten
1/2 cup milk
1 1/2 cup sifted flour
1/2 tsp baking powder
1/4 tsp salt
1 cup blueberries
1 tsp Watkins Lemon Extract
Lemon rind (if desired)
Cream shortening and sugar; add eggs and lemon extract. Then add flour mixed with baking powder and salt, alternating with milk. Then stir in the blueberries and lemon rind.
Turn mixture into a loaf pan that has been sprayed with Watkins Cooking spray. Bake for 55 to 60 minutes in 350 degree F oven.
Remove from oven and while still hot, ice with a mixture of 1/4 cup white sugar plus juice of on lemon (approx 2 Tbsps and 1 tsp Watkins Baking or Pure Vanilla
