Maple Shortbread



Maple Shortbread 

These cookies will literally melt in your mouth














Maple Shortbread

2 cups butter, softened
1 cup maple sugar
1 tsp Watkins Maple Extract.  (If you cannot find maple sugar you can use extra Maple Extract)
1/2 cup cornstarch
3 cups flour


Preheat your oven to 350 degrees.  Lightly grease your cookie sheets or use Watkins cooking spray.
Using an  hand held electric mixer, cream the butter, sugar and maple extract until very creamy.  Gradually beat in the flour and cornstarch.  Beat the batter until it looks like slightly over beaten whipped cream.  About 10 minutes.    Drop the batter by heaping a generous tablespoon on to the prepared cookie sheets.  It the batter sticks to the spoon slightly grease it and dust it with cornstarch.   Add a walnut piece into the middle of each cookie.   Bake the cookies for approximately 15 minutes.    Remove the cookies when they start to brown on the bottom.   While the cookies are still hot from the oven sprinkle a little of the maple sugar on top of each cookie.     Let the cookies cool for at least  10 minutes before transferring them on to a plate.

Banana Spice Bread

1/3 cup/80 mL vegetable shortening
1/2 cup/125 mL sugar
2 eggs
1 tsp/5 mL Watkins Original Gourmet Baking Vanilla™
3/4 tsp/4 mL Watkins Banana Extract
1-3/4 cups/440 mL all-purpose flour
1 tsp/5 mL baking powder
1-1/2 tsp/7.5 mL Watkins Pure Ground Cinnamon
1/2 tsp/2.5 mL baking soda
1/2 tsp/2.5 mL Watkins Coarse Sea Salt
1/4 tsp/1.2 nutmeg
1 cup/250 mL mashed ripe banana
1/2 cup/125 mL chopped walnuts

Grease bottom only of a 9 × 5-inch/23 × 13-cm loaf pan; set aside. In large bowl, cream together the shortening and sugar until light and fluffy. Mix in the eggs and vanilla and banana extracts until well combined. In another bowl combine flour, baking powder, cinnamon, baking soda, salt, and nutmeg. Add alternately with bananas to sugar mixture; mix well. Stir in nuts. Pour into prepared pan. Bake at 350°F/180ÂșC for 45 to 50 minutes or until bread tests done. Cool in pan on rack 5 minutes. Turn out of pan and cool completely on rack. To store, wrap tightly and refrigerate.
Makes 1 loaf, 12 servings.

TIP: No Baking powder in your cupboard? For each cup of flour you recipe calls for, substitute 2 tsp cream of tartar, 1 tsp baking soda, and 1/2 tsp salt for the baking powder you don't have.
